SAUSAGE, TOMATO & ROCKET GNOCCHI BAKE RECIPE

Jamie and I are always on the hunt for a quick and easy recipe to cook for dinner on a weekday evening. We spotted this one on the Sainsbury’s website and thought it looked amazing. 

It only takes 10 minutes to prep and 15 to cook, making it the perfect weekday recipe. I made a few tweaks to the original recipe to suit our taste, but I hope you’ll love it as much as we do!

WHAT YOU’LL NEED:
  • 1 tbsp olive oil
  • 4 sausages, removed from their skins and crumbled
  • 2 cloves garlic, crushed
  • 400g chopped tomatoes
  • 500g ready-made gnocchi
  • 60g rocket
  • 125g mozzarella, torn into small pieces
  • oven proof baking dish
  • frying pan
  • large saucepan

HOW TO:

I like to fry my gnocchi as I find boiling gives quite a gloopy texture. Frying it keeps it nice and squidgy on the inside, but firm and crisp on the outside! So, on medium-high heat I warm a little oil and fry the gnocchi for around 10 minutes.

Whilst the gnocchi is cooking, heat your large saucepan with a glug of oil on a medium heat. Decant the sausage meat from its skin and break into pieces. Cook until its brown all over (approx 5-8 minutes).

Add the garlic, along with any extra seasoning you may like. I’m currently loving chilli salt for an added kick of flavour. Stir in and cook for 1 minute, then add the chopped tomatoes and splash of water. Turn down the heat and simmer for 5 minutes.

Remove the gnocchi from the heat and pop it into the saucepan, mix it all up and stir in the rocket.

Once the rocket has started to wilt, transfer it all across into your baking dish. Crumble over your mozzarella and place under the grill (on a high heat). Keep an eye on it and remove from the grill once the mozzarella is melted and golden.
